Black Pepper Quality Parameters Buyers Should Discuss
Published by Assurex International Traders3 min read

The short answer
Black pepper is specified by grade or berry size, bulk density (grams per litre), moisture, light berries, foreign matter and food-safety tests such as pesticide residues, microbiology and mycotoxins. Each should be agreed as a measurable limit with a test method before contracting.
Grade names
Indian black pepper is often described using trade grades. MG1 (Malabar Garbled Grade 1) is a widely used general grade. TGEB (Tellicherry Garbled Extra Bold) describes larger berries, typically retained on a 4.75 mm sieve. "Garbled" means cleaned of stalks, light berries and extraneous matter.
Grade names are a starting point — the parameters below are what actually define a lot.
Bulk density
Bulk density is the weight of a litre of peppercorns, in grams per litre (g/L). Higher density indicates heavier, more mature berries. Buyers often specify a minimum, such as 500 g/L or 550 g/L.
Moisture
Moisture affects both weight and safety. Excess moisture raises the risk of mould. Agree a maximum and the test method.
Light berries
Light berries are immature or hollow peppercorns with less weight and flavour. Specifications usually set a maximum percentage.
Foreign matter
Stems, pinheads, dust and stones reduce yield. Set a maximum for extraneous matter.
Food-safety testing
Many importing markets test spices for:
- pesticide residues against national maximum residue limits
- microbiological contamination, such as Salmonella
- mycotoxins, where relevant
Some buyers require steam-sterilised pepper to reduce microbial load. Testing is typically carried out by accredited third-party laboratories, with reports shared before shipment.
Volatile oil and piperine
Pungency and aroma relate to piperine and volatile oil content. If these matter to your application, specify them and require a test report. Avoid relying on typical values that are not supported by testing of your lot.
